We couldn’t have started this tasty selection with a better suggestion. Maribel is a devotee of traditional cuisine. She learned much of what she knows now about cooking from her mother and grandmothers, which is now evident in the delicious dishes she prepares.
From her exquisite traditional menu, we highlight an irresistible Spanish soup, specifically grenadine. Her almond soup with croutons is a first course not to be missed. To complete your experience, the piquillo peppers stuffed with cod, and a succulent meringue with custard, a recipe of her grandmother.
A flavourful rice stew in the heart of Madrid
Another of the dishes that are most appetising in cold weather is a good rice stew. Actually, any time of the year is perfect to eat a rice dish like the one Cheli makes. Made with chickpeas, chicken, a hint of dedication, and lots of love, this Spanish stew will surprise the most demanding palates.
To top it all off, the menu is completed with breaded chicken cutlets stuffed with bechamel sauce, a tasty starter, and a greedy dessert based on egg flan with creamy yoghurt. So, if you are staying in Madrid these days, Cheli’s gastronomic proposal is a must!
The traditional and irresistible Sopa de Picadillo
So simple as flavourful, this Spanish soup is a dish that warms you up immediately. Almost as comforting as the heat of a fireplace, this soup made with meat broth, and chunks of several ingredients such as chicken, cured ham, boiled eggs and croutons will soon become one of your favourite dishes.
When you try Che’s picadillo soup, you’ll immediately fall in love with it! Her fabulous menu also includes roasted chicken, stuffed endives, and Manchego cheese with fried almonds. And the classic tocino de cielo, a delicious dessert worth a try. Indulge yourself at this flamenca’s house and try her exquisite menu. You will be captivated!
A meloso rice from Jerez de la Frontera
Our third proposal of Spanish soups and stews for winter is a delightful rice, a real treat. There is no specific word to describe this exquisite delicacy. A sort of short-grained rice commonly used in Spain for paellas will be the main ingredient of this meloso dish. Not a broth, not a paella, and not exactly a soup, meloso (mellow) rice offers a texture similar to the typical risotto but with no butter nor cheese at all. The flavour is spectacular.
Our local cook, Inma, prepares a meloso rice with shrimp and prawns that will leave you speechless. A few traditional tapas and again a heavenly dessert (tocino de cielo) with her personal touch complete this savoury menu you should taste if you are around Cádiz.
Delicious hearty stew with cuttlefish and chickpeas
Legumes could not be missing from our culinary selection of Spanish soups and stews. In fact, Spain is a country where pulses are often cooked all year, but more frequently in the cold seasons.
Known for their rich nutritional properties, chickpeas are the central ingredient of María’s savoury stew. Cuttlefish gives the extra hint of flavour to this wonderful hearty dish. If the menu also includes, as in this case, an assortment of cured meats to start with, chicken with garlic for the main course, and homemade custard for dessert, then your winter dining experience will be unforgettable, don’t you think?
