Small cuttlefish from the coast with family sauce

The fresh, juicy cuttlefish are the protagonists, cooked to just the right point so that their flavour of the sea is fully revealed. They are accompanied by a delicate sofrito, where garlic and parsley intertwine harmoniously, enhancing the essence of the molluscs without overshadowing them. The sauce, light and fragrant, is served hot and steaming, inviting you to immerse yourself in its enveloping aroma that prepares the palate for tasting.

This dish is a family recipe, it's my favourite dish and my mother always manages to bring a smile to my face every time she prepares it.

Mellow rice with select shellfish

Slow-cooked, this dish combines rice with a selection of quality fresh seafood, such as red alis and squid, which are immersed in a broth enriched with a vegetable stir-fry that enhances the flavour of the seafood, in nuances of the sea. The technique ensures that the rice acquires a perfectly mellow texture, absorbing the intense and aromatic flavours of the seafood and a sofrito of onion, garlic and tomato that forms the basis of this comforting dish. Saffron and paprika add colour and a hint of spice, while the leisurely cooking method allows all the ingredients to meld harmoniously, creating a dish that not only nourishes the body but also the soul, evoking memories of family meals and the warmth of home.

It is my favourite dish, but I no longer order it in restaurants because it is never as good as the one I prepare at home.

Artisan custard with whipped cream

Homemade custard is a traditional, creamy and comforting dessert that evokes memories of childhood and shared family moments. This delicious treat is made with simple but flavourful ingredients, such as milk, eggs, sugar, and vanilla, which are simmered until they reach a smooth, silky texture. The essence of vanilla, or in some cases cinnamon and lemon, infuses the custard with a sweet, enveloping aroma, creating a delicate and deeply comforting flavour profile. Traditionally, they are served in individual bowls and sprinkled with cinnamon powder, which adds a spicy touch and contrasts beautifully with the pale yellow of the custard.
